I bought the The Science of Good Cooking (Cook's Illustrated Cookbooks) 4 years ago, and to date it remains one of my favourite cookbooks. I find myself reviewing the techniques repeatedly.Cook’s Science is a new book from Cooks Illustrated. Instead of covering 50 techniques, e.g. “Gentle Heat Prevents Overcooking”, and “Salting Vegetables removes liquid”, this book covers 50 ingredients and their characteristics and best uses. AlmondsAs always, the test lab uses a very scientific approach, bringing in machinery such as moisture and texture analyzers to see if the food objectively really is as chewy or moist afterwards as we think. I liked too that this book took more time to go into how base level ingredients - proteins, carbohydrates, water and their distribution might impact whether food tastes sour or mushy, crispy or soggy.In terms of the actual ingredients themselves - I’m learning a tonne! A real keeper was knowing that meat actually sears better and is tastier if you cook it straight from frozen rather than defrosted (of course fresh, never frozen trumps all!) Or knowing that foods like cauliflower have a sweet spot in cooking time to bring out the nutty flavour. Or confirmation that fresh ginger makes meat mushy. I like ginger’s tenderizing effect on say, Korean beef marinade, but I was unpleasantly surprised to find sous vide meat with a ginger marinade made the meat really mushy. Reason : ginger contains an enzyme called zingibain that breaks down collagen in the meat over time.Speaking of sous vide, I’m happy to see this book make more reference to this technique, as I’ve incorporated sous vide cooking into my daily routine much more frequently.As always, each chapter is broken down by first giving an overview of the ingredient, a test lab experiment (for example, how to best fry white fish and preventing it from sticking on a non-stick pan? Answer : use vegetable oil, not spray on a very hot pan), as well as a number of lab tested recipes for that ingredient. There was a good variety of recipes with a mix of classics and international, as well as a DIY section for making your own bacon, tofu, and jams.Overall, I think both books are well worth having, one to learn the best techniques, the other to learn the base characteristics of your cooking ingredients. I’m already sure I’ll be gifting this book to many of my foodie friends :)

Cooks Science was a disappointment because (1) the recipes are repeats of those published in The Complete America's Test Kitchen Cookbook and (2) because they repeat the same information verbatim in the "How the Science Works" section, the "Test Kitchen Experiment" and the preface to each recipe. They could have cut the text by 2/3 and had the same information. If you have any of their other books, save your money and avoid this one.

If you want to know what works best and why, this is for you. Even if you choose to ignore their recipes, the results of their tests are fascinating, practical, and helpful for avoiding mistakes. Most cookbooks concentrate on the "how", this one tells you the secrets of the "why". If you are only going to own two cookbooks, this should be one of them.

I have A LOT of cookbooks and chef textbooks. This is an attempt to explain some science behind cooking 50 ingredients, however very little of the information in this book is valuable when it comes to cooking. If you have any experience following recipes or watching the Food Network, you are already at a higher level than this book was written. Save your money. I enjoyed "The Professional Chef" by the Culinary Institute of America. It gives you real information of why's and how's as well as ingredient matching, designing your recipes, and techniques when cooking. It's a go to when a recipe calls for something I haven't had much experience with.

I've only made one recipe out of this book so far, the gingerbread, but it turned out fantastic. There are no pictures except for diagrams and charts explaining the properties of the specific ingredients, but that's probably because there just isn't any room! Each extremely detailed recipe is preceded by about 3-4 paragraphs in which they explain their process of reaching the perfect recipe. A great buy at any price.

This is beyond "I love it". I think this is the best book ever written about foods and their results of cooking. I have read this book from cover to cover and it is a great reference book and number one in my cooking library. This would make a wonderful gift to a beginning cook as well as a seasoned chef. WAY MORE than 5 stars. Its a 10 at least.

Fabulous!!! Just what you'd hope for in this comprehensive, engaging, smart, and enticing book. Purchased for my sweetheart and he just poured over it the minute he opened it. Beautifully bound and presented too. Recipies look fantastic and we can't wait to try!

I have to admit to ordering both books by the authors. The important facts ate covered in each book but different recipes . Everything I have tried has been successful. Yeah!!!

One of the first accounts by a Westerner who visited (as of the mid-80s, although this is not specified) the then-less accessible eastern reaches, Katie Hickman's travelogue proceeds in expected fashion. That is, she's a competent travel writer and her integration of the remarks of earlier visitors helps give background for her own Raj-reminiscent trek. Oxford educated, from a diplomatic family, with an international upbringing, she does exude the air of privilege. She and her companion, photographer Tom Owen Edmunds (with 250 rolls of film), gain quickly via Calcutta connections the sponsorship of the Bhutanese royal clan that allows them all the time they need and lots of horses to make the arduous trip.The lateral east-west road, due to landslides and construction, is out between Jakar and Mongar. The pair and their guides must go by horse over a long stretch. However, this crucial part of the itinerary lacks excitement. Perhaps those more enamored of horses may find it more enticing, but for me, it did not keep my interest.Also, the tone Hickman adopts can grate. She twice puts down the annoyingly brusque Westerners on a group tour who cross their path. While their "unmistakable plumage" of garish windbreakers and their rude insistence on taking photos of monks where it is not allowed may merit critique, she seems oblivious to her own entitlement and the professional and social connections she and Tom enjoy, compared to the everyday tourist consigned to a package tour--besides, any tourist in Bhutan must go in the company of guides and and an approved itinerary--which only the royal intervention overruled and extended without limits in Katie and Tom's case.Late in this tale, all the same, two incidents enliven it. One horribly, as leeches infest the pair and one bite makes her bleed profusely from the back of her head as she attempts, in a memorably graphic scene, to sit at the foot of a beady-eyed lama in a dramatically situated temple. Trying, damp and twitchy with imagined or real leech bites to sleep near him that night, musicians and chanters blare. Tom says: "It's like sleeping inside a grand piano."A bit later, as they find the Bragpa (aka Brokpa) yak-herders of Mera and Sakteng, lots of inebriation and celebration reward them off-road. Like many travelers, the chronology and scenery seem to take the viewer out of now. "Mera had the easy earthy intimacy of a medieval tavern. But Sakteng was a Childe Harold's tower, a darkling place, deep and mysterious as legend." (186)Hickman to her credit differentiates between a traveller's reveries of anticipation, the possibility ahead of enchantment that drives one on, and the "grumblings of the camel men" (60) who must accompany and cater to the romantic and testy whims of those who hire the locals. You don't get much sense of the Bhutanese who wait on her and meet her, and this report relies much more on the perspective of an intelligent Englishwoman and her wry companion who seek to get under their own skin, to hear the heartbeat that isolation and endurance intensify.For longer reports from about the same relatively "pre-modern" (the road connected, but not yet electricity, TV, phones, or the internet) period in the eastern region, see Jamie Zeppa's "Beyond the Sky and the Earth" (reviewed by me May 2012) and Ken Haigh's "Under the Holy Lake" (reviewed Dec. 2012). Both teachers of English from Canada, Zeppa and Haigh nearly overlap in place and time with Hickman, but their stints allow them a deeper insight into this area. This counters the brief glimpses and the few photos Edmunds includes here that can't offer much depth or context.Hickman's (first published in 1988) book ends very suddenly. Almost as quickly as the pair and their retinue burst into the Bragpa's villages, they realize that they must return. At that moment, Hickman concludes.

Hickman writes beautifully. This book is a captivating account of her own journey into the depth of Bhutan, which she records honestly from the bottom of her heart. Hickman, unlike most western writers on Bhutan, captures something of the soul of Bhutan, as she narrates her own emotional journey as a young woman of good sense and rich sensitivity.At the same time, the book is also an exciting adventure story. Anyone with good wanderlust in their heart will not be able to put it down until all the pages are turned, and will be left yarning for more after the last page is read.While eastern Bhutan remains less exposed to outside visitors than the western part of the country, it is now much easier to travel there than during Hickman's time. There is now a motorable road to everywhere she went on foot and ponies. Television, telephone and internet highway -- prohibited or non-existent back then -- now bring in outside information more easily to Bhutan. Most importantly, Bhutan has achieved a phenomenal increase in the literacy of her people, with English as the chosen medium of class-room instruction and as the "link" language among the country's numerous linguistic groups. As such, beyond its literary value, this book also has a place in the historical literature, capturing the ways of the eastern people of Bhutan before their greater exposure to the outside world.Having said that, however, Bhutan's vision of "Gross National Happiness" (being more important than Gross National Product), and the enlightened development strategy associated with it -- balancing material and spiritual gains, and valuing its historical, cultural and natural heritage -- mean that Hickman or any other visitors would find the soul of Bhutanese people not much altered since her visit.The book would certainly tempt many to consider visiting this unique Himalayan nation called Bhutan. Like Hickman's own, it promises to be a journey of personal discovery, leaving one to ponder some cosmic reasons why such a nation exists on earth...

I was anxious to read about Bhutan before and after a visit there, but I found this book a disappointment. I don't know what I expected from someone's first attempt at writing such a book, and at a relatively young age- but I didn't feel that the author was able to move beyond her own needs and discomforts. The writing is self-conscious. By chance I came across the web journal "The Elegant Variation (TEV)." Here is their definition of TEV, and it fits the writing in this book perfectly! I've not read her other books, but I hope they have matured."The Elegant Variation is "Fowler's (1926, 1965) term for the inept writer's overstrained efforts at freshness or vividness of expression. Prose guilty of elegant variation calls attention to itself and doesn't permit its ideas to seem naturally clear. It typically seeks fancy new words for familiar things, and it scrambles for synonyms in order to avoid at all costs repeating a word, even though repetition might be the natural, normal thing to do: The audience had a certain bovine placidity, instead of The audience was as placid as cows. Elegant variation is often the rock, and a stereotype, a cliché, or a tired metaphor the hard place between which inexperienced or foolish writers come to grief. The familiar middle ground in treating these homely topics is almost always the safest. In untrained or unrestrained hands, a thesaurus can be dangerous."

Bought this book for my 10 y/o grandson after Hurricane Irma in Florida because we both wanted to know more. He loved it and reads it for required reading each night and calls me to tell me what he learned. Then he saw Al on TV... what..? Perfect.

Saw and heard him being interviewed when the book first came out...was impressed by among other things that he was apolitical, preferring to refer to changes in the weather as "Climate Change" rather than "Global Warming". I'm a pastry chef by profession So I was excited to try the scone recipes in this book. I purchased some dates and so I chose the oatmeal scone recipe. 2 tablespoons of baking powder? this can't be right but I gave the recipe the benefit of the doubt , soon as I tasted the batter I know it was wrong so I added another recipe of batter and still could not get the taste of the baking powder out of it, i had to throw the entire finished batch of scones in the garbage. what a disappointment ! somebody didn't proof read these recipes very good! I'm sure it is supposed to be teaspoons instead of tablespoons, be very careful if you make any of these recipes. You may have to compare them with other recipes you already have.

OMG! The chocolate mousse cake on page 109 is to die for. I used Ghiradelli's double chocolate chips and it came out so chocolatey and SMOOTH. I also got lazy the second time (and every time after) I made it and used the pre-made Oreo pie shells. Doing that cuts the time in half. That "cake" melts in your mouth. It's like a heavy chocolate silk pie. Of all the recipes I've tried so far, that one is our favorite and I always get compliments and people ask for the recipe. This is a great compilation of several types/categories of desserts. I hope to try them all eventually. Very glad I bought this book! I usually get all my recipes online. This is the first book I've purchased since my Betty Crocker one 20+ years ago when I first got married. Tate's is worth every penny.

The recipes I've tried are good. The instructions are clear, and the notes and narrative are interesting and helpful.

I have ttried only a few of the recipes yet (hence the 4 stars instead of 5), but I was very pleased with the chocolate chip cookie recipe. They came out exactly like the ones from their bakery (Tate's) I have been buying in gourmet shops. I did use premium chocolate chips, rather than the ones at the supermarket and I used King Arthur Flour instead of Gold Medal, but I'm not sure it made a difference. I wish the recipe for Tate's macadamia cookies had been included, they are heavenly. I suspect it's the same as the chocolate chip ones only with chopped macadamia nuts. I'll try that and update my review.

Finally, a cookbook for the regular cook (as opposed to a gourmet cook). The chocolate chip cookie recipe is superb - as are most of them. Nearly all of them call for regular ingredients. This cookbook is a true winner.

The best chocolate chip cookie recipe ever, as are nearly all the offerings in this book. Wonderful!

I'm a sucker to try anything that Ina Garten had a hand in.

A great resource. I have the Kindle edition, which works great, because you can just click on an item in the table if contents and go right to it. I have made the apple cake several times--marvelous. Also the prize-winning blueberry buckle is great, and very easy.

THIS IS EXCEPTIONAL BOOK. I'M MIDWAY THROUGH AND EAGER TO CONTINUE THIS EXTENSION OF BENJAMIN'S WORK.

Jessica Benjamin’s work is among the few bodies of work in relational psychoanalytic theory in which an entire system is proposed. Her work revolves around a theme—recognition theory, intersubjectivity, and the Third--the very subject of this book—commodious enough to contain all of psychoanalysis. This is a theory that has implications for every theoretical, developmental, and clinical question. I am not exaggerating when I say that. I defy you to come up with an aspect of psychoanalysis that this theory does not touch on in one way or another. Comprehensiveness is one reason that Benjamin’s work has been so influential. But of course there are others. For one, the work is formidable. Benjamin’s thinking simply cannot be pooh-poohed on either intellectual or clinical grounds. Its critics can disagree with it, which is fine--but they can’t—and they know they can’t—dismiss it. They must engage with it. The work’s comprehensiveness and the respect it commands are accompanied by another quality that I think has mattered greatly: the work is immensely appealing. It privileges human connection--but unlike most other theories of that kind, it takes our failures in that respect just as seriously as our successes, and pays at least as much attention to them. In Benjamin’s theory of recognition, we recognize ourselves and our struggles—our best moments and our worst—as psychoanalysts, patients, parents, lovers and friends. In noting the qualities that make Benjamin’s work influential, we can’t overlook its commitment to an ethical and moral stance: the central significance for psychoanalysis of human freedom, and the unapologetic claim that psychoanalysis is a moral endeavor. I find this property, which has been deeply important to me in Benjamin’s work ever since her first, groundbreaking book, The Bonds of Love (1988), not only enlightening but deeply admirable. This is not your grandfather’s psychoanalysis--and I’m so glad it’s not. And finally, there is Benjamin’s insistence on clinical discipline. That is one of the themes I took away from Beyond Doer and Done To, and I appreciate it because I agree with it, but also because it is one of those qualities in Benjamin’s work that makes it impossible for those with more conservative psychoanalytic views to dismiss her. I quote from the end of Chapter 2: “Analytic work conducted according to the intersubjective view of two participating subjectivities requires a discipline based on orientation to the structural conditions of thirdness. It is my hope that this clinical and developmental perspective on co-created intersubjective thirdness can help orient us toward responsibility and more rigorous thinking, even as our practice of psychoanalysis becomes more emotionally authentic, more spontaneous and inventive, more compassionate and liberating to both our patients and ourselves” (p. 48). Doer and Done To is highly original, immensely erudite, morally and intellectually powerful, and profound. It is a mature statement, by which I mean is that Benjamin is finally free to take for granted the place of intersubjectivity in the psychoanalytic world. The movement her ideas has inspired has long since arrived. And so now, no longer needing to clear a space for herself and her thinking, she can turn her full attention to the elaboration of the developmental and clinical issues of intersubjectivity that have always been at the center of her interest. To these issues, Benjamin has added in this book a consideration of the social/political. I wish that everyone involved in situations of violence and collective trauma around the world, both those who commit the violence and those who suffer it, could not only read, but heed, Chapter 7, “Beyond ‘Only One Can Live’” This book’s primary concern is clinical psychoanalysis; but Benjamin’s intersubjectivity theory has always been a truly interdisciplinary project, and Benjamin expresses in these pages her hope that the social and philosophical implications of this book, and no doubt all of her work, will appeal to non-psychoanalysts, as well. I share that hope. It would be broadening for them, no doubt about that, but that’s not the only reason I’d like to see this book have that kind of cross-disciplinary impact; I also would like for all the non-psychoanalysts to understand, which very few of them do, what psychoanalysis today has to offer. And what better representative than Benjamin’s work? No matter whether you read in a year five books or fifty in psychoanalysis, gender studies, cultural studies, or social philosophy, this needs to be one of them. It’s that significant.

This is an elusive topic, but Benjamin's writing is lucid and allows one to move through complex ideas with relative ease. Her ideas take us beyond intersubjetivity, into the realm of an exquisitely nuanced dance between "doer" and "done to." As a psychotherapist with many decades of experience in long term treatments, I found the author articulating experiences I hadn't quite been able to describe even to myself. I've long been concerned with the issue of therapist apology and./ or acknowledgement of doing harm to the patient, mindful of the old training "rules" and mindful too of the human necessity of acknowledging responsibility when we inevitably harm each other. Benjamin's thoughts are welcome, partly because she comes down on the side that I favor and even more because she describes in great detail the ways in which such acknowledgment is psychically organizing and how it supports regulation, autonomy and integrity. She also writes clearly of the therapist's need not only to tolerate uncertainty, disregulation, blankness, helplessness and fear, but also to expose those states to the patient (with judgement and sensitivity) as a way of creating the conditions for deep change.This is not just a book about psychotherapy. It doesn't flinch from issues of morality, most notably the moral necessity of what Ellie Wiesel called "Witnessing." Benjamin has done a masterful job of showing us that regardless of training or school of thought, moral issues must be acknowledged and lived in the therapeutic encounter.

Essential reading. Spans the gamut between the psychological and the sociopolitical. Shows how the post-Freudian stance of equivalence and immersement (rejecting the authoritarianism of “the one who knows” ) links up with efforts at reconciliation in the many, many theaters of war and oppression.
